Applesauce-Spice Cake

Ingredients:

  • 3 cups flour
  • 1 3/4 tsp. baking soda
  • 1 tsp. each cinnamon and nutmeg
  • 1/2 tsp. salt
  • 1/4 tsp ground cloves
  • 1 cup butter or margarine, softened
  • 1 cup packed brown sugar
  • 1 cup sugar
  • 2 cups applesauce
  • 1 tsp vanilla
  • 1 cup golden raisins
  • 1 cup chopped walnuts
  • 1/4 cup powdered sugar

Directions:

  • Stir together flour, soda, cinnamon, nutmeg, salt, cloves; set aside
  • In large bowl, cream butter and sugar until fluffy
  • Fold in applesauce and vanilla
  • Use 1/4 cup flour mixture to toss with raisins and walnuts; set aside
  • Gradually stir flour mix into cream mixture until well blended
  • Fold in raisin-walnut mixture
  • Spoon into greased 9-10 inch tube pan
  • Bake for 1 1/2 hours at 325 degrees or until cake springs back when touched
  • Cool on rack for 20 minutes
  • Turn cake topside up
  • Sprinkle with powdered sugar when cool
