Applesauce-Spice Cake
Ingredients:
- 3 cups flour
- 1 3/4 tsp. baking soda
- 1 tsp. each cinnamon and nutmeg
- 1/2 tsp. salt
- 1/4 tsp ground cloves
- 1 cup butter or margarine, softened
- 1 cup packed brown sugar
- 1 cup sugar
- 2 cups applesauce
- 1 tsp vanilla
- 1 cup golden raisins
- 1 cup chopped walnuts
- 1/4 cup powdered sugar
Directions:
- Stir together flour, soda, cinnamon, nutmeg, salt, cloves; set aside
- In large bowl, cream butter and sugar until fluffy
- Fold in applesauce and vanilla
- Use 1/4 cup flour mixture to toss with raisins and walnuts; set aside
- Gradually stir flour mix into cream mixture until well blended
- Fold in raisin-walnut mixture
- Spoon into greased 9-10 inch tube pan
- Bake for 1 1/2 hours at 325 degrees or until cake springs back when touched
- Cool on rack for 20 minutes
- Turn cake topside up
- Sprinkle with powdered sugar when cool
